Pastry Production Manager / Industrial Pastry Chef
Gallothai is currently recruiting a Pastry Production Manager to take charge of our growing pastry production, in Wellgrow/Chachoengsao. With growing markets in Thailand and for export, and with recent expansion of our facilities, we are looking for an energetic, innovative and conscientious leader to take charge of our pastry team, and continuously improve our processes and management. For the right individual, there is significant room to add you own mark on the way we work, the recipes, and the team.

Large-scale production: Our pastry chef needs to be comfortable in the industrial environment and is responsible for supervising the production of medium to large quantities of cookies, muffins, choux pastry, fresh pastries, biscuits, petit fours, macaroons. This involves managing production schedules with the planning department, coordinating with other departments, and ensuring efficient workflow.
Recipe Standardization: Industrial pastry chef at Gallothai, have the opportunity to develop recipes that can be replicated consistently on a large scale. They focus on optimizing ingredients, measurements, and production processes to ensure uniform quality across batches.
Equipment Operation: Pastry chef is proficient in operating and maintaining specialized equipment used in large-scale production, such as industrial mixers, ovens, depositors, flow pack, printer macaroons. They ensure that equipment is functioning properly and troubleshoot any issues that arise.
Quality Assurance: The pastry chef is responsible for maintaining high standards of quality and food safety throughout the production process. They carry out regular quality checks, monitor product consistency and implement corrective actions if necessary, and in close collaboration with the quality department.
Cost Control: You will be required to optimize production costs while maintaining quality standards. Analyze production data, identify opportunities to implement efficiency improvements.
Team Leadership: Pastry chef leads teams of production workers, pastry cooks, packing staffs and production assistants. You will provide training, guidance, and supervision to ensure smooth operations and a cohesive work environment.
Overall, our pastry chef will play a crucial role in overseeing the large-scale production of various products, consistency, and quality while adhering to food safety standards and regulatory requirements.
